My Heart Hurts.

When I woke up this morning, Aubbie was sleeping next to me on one side and Mimi was on the other side. I looked again at Aubbie wondering what the little lump of fur was on top of her. It was my little Lulu sound asleep. I couldn't help myself, I had to take a picture of it. Thank God I did. After I got ready for work, I took Lulu to the vet to drop her off so she could get spayed. A couple hours later, one of the vets called and told me there were complications, Lulu went into cardiac arrest, and died. My heart is completely broken. I loved that cat so much. She was the sweetest, friendliest, funniest cat I've ever had. I picked her up from the vet a little bit ago and we are going to bury her outside where she loved to watch out the window. I know all this may sound so silly...but I really love my animals with all my heart. I feel so empty. I wish I had known what would have happened....I'd rather listen to her meow (moan) all night long then not have her at all.

I also wish I had known this would be the last picture I'd be able to take of her....

Silence is golden...

Peace and quiet is no longer in the Summerford household...my little Lulu is in heat. We tried to hold out as long as possible to get her spayed (because, well...it ain't cheap) and now, we regret not breaking down and taking her sooner. You haven't heard a horrible noise until you've heard a female cat in heat. I had to break down and buy ear plugs just so I could sleep. Such is life. However, the good news is she does get spayed Jan. 31st!! YAY! Only 9 more days of hell....
Anywho, I have more to write about besides my cat moaning all day and night....I have a very yummy recipe for anyone who wants to try something new! My sweet little husband loves to try and invent new recipes and he just came up with this one a couple weeks ago. I love it so much that I want him to cook it all the time now!! Soooo, Bon Appetite!!

Breaded Italian Chicken Breast:

You will need:
  • Boneless Chicken Breasts (we usually eat one a piece)
  • 1 package of Saltine crackers
  • 1/4 cup of butter
  • 1 bottle of Zesty Italian Dressing
  • Baking pan large enough to hold all your chicken

Directions:

  • Pour Italian dressing over chicken breasts (in a container) and marinate for at least 30 minutes
  • Preheat oven to 325
  • Line baking pan with tin foil
  • Crunch up Saltines as small as you can (enough to batter the amount of chicken breasts you are cooking)
  • Melt the 1/4 cup of butter
  • Take chicken breasts out from marinade, dip in melted butter, then cover with crushed up Saltines
  • Pour the Italian dressing used to marinate the chicken breasts in the bottom of the baking pan just enough to cover the bottom of the baking pan
  • Place the battered chicken breasts in baking pan and pour the remaining saltine crumbs (if there is a ton left don't over due it, just pour what you think is enough) over the chicken
  • Cook for 1 hour

"I can't quite put my finger on it...."

"Oh, I know what it is...you look like a girl now"!! HA HA! =)

This weekend was fabulous!! Kristi and Jo came in town for Jo Jo's first ever Bridal Shower, so that set up for a much needed girls weekend! Friday afternoon we helped Jo with her very secret wedding gift for Justin. Very hush hush. Friday night we went out to eat at O'Charley's with the coolest photographers ever Rae and Wes!! And of course Avery! I'm going to steal Avery! However, I think she only had eyes for Ruco! Watch out Kristi!!

If you're wondering what little Avery is gazing at so lovingly, well that would be Ruco.

What a cutie!!

Saturday we went to Jo's Bridal Shower that was thrown by her Aunt Debbie. The shower was very very nice and of course I loved the yummy food! Jo got lots of very nice things (mostly kitchen gadgets which she and Justin will of course need). After little Jo Jo's shower, Jo, Kristi, Ruco, and I went to pick up Jo's other wedding gift that she could not open at the shower....a Bassett Hound puppy!! There were three Bassett pups that were so adorable...Jo picked out one and Kristi picked out one to take when she visited little Jillo next weekend! I love Bassett pups...and let me just tell you it took some mighty strong will power on my part not to get the third puppy. Oh well, I suppose I will have to wait until we build our fence. Copper and Fred are adorable and I know they are lucky puppies to be going to live with Jo and Jill! Saturday night we went to Applebees (or Applehell as Jo calls it) and gorged on food again! I swear, I almost ate myself into a coma this weekend. We had fun sitting and chatting and waiting for our server to join in the conversation!! Ha ha! Good times! =)

Jo and I would be sooo excited if Ruco and Kristi decided to stay in the US of A. However, Kristi would be a very sad girl!

Photobucket
Ohhh, I'm going to miss moments like these!!

Sunday we went to Bagelheads so Jo could say goodbye to Kristi because she won't see her again for 2 whole years! Then we all said good bye to little Jo Jo and Copper so they could head home to Tampa! Later that afternoon Kristi, Ruco, Rhett, and I went to see Cloverfield, which I liked but I was thoroughly confused as to why it was named Cloverfield. Anywho, if anyone has seen the movie and knows why it was named that, then please, enlighten me. The rest of Sunday was spent relaxing at home and trying to stay warm!! I am so very happy because I don't have to work tomorrow! I get to stay in my nice, warm bed and sleep and sleep and sleep (nudge nudge, Jo)!
Life is of course not all sunshine and rainbows....Kristi and Ruco will be leaving for Africa for good in two weeks and I don't think I have completely processed it yet. It makes me too sad every time I really think about. I know that my friendship with Kristi won't change, but our surroundings and the stage we will be in in our lives will. The thought of not sharing the important moments of major life events (ex. babies) saddens my heart, so I guess it's settled...I will HAVE to save up and visit her in The Gambia. And that's that.

What's Your Obsession?

A psychiatrist was conducting a group therapy session with four young mothers and their small children. "You all have obsessions," he observed.
To the first mother, he said, "You are obsessed with eating. You've even named your daughter Candy."
He turned to the second mom. "Your obsession is with money. Again, it manifests itself in your child's name, Penny."
He turns to the third mom. "Your obsession is alcohol. This too manifests itself in your child's name, Brandy. "
At this point, the fourth mother gets up, takes her little boy by the hand and whispers "come on Dick, we're leaving."

=) Just thought it was funny and wanted to share.

Oh how I love Christmas Time!!

Time for an update!! Christmas Day was great! Rhett and I spent Christmas Day with both our families and then left that afternoon/night to leave for the SC (I keep saying the SC to make fun of Miss South Carolina, just in case anyone was wondering). Sooo, our trip to the SC was so much fun! I know I always say that I love seeing my mom, but I'm going to say it again...I love seeing my mom. I see her maybe twice a year, which really makes me treasure the time I spend with her. We opened presents, went out to eat a few times, shopped, played the Wii (alot), played some board games, watched football (of course....WAR EAGLE), went sight seeing, played with all our puppies (Buddy, Aubbie, and my mom's new puppy Bebe), and rang in the New Year! Sadly, the time we were there flew by too fast. Hopefully Rhett and I will get a chance to see my mom and Charlie sometime over the summer. Anywho, today is my Birthday!! Whoo hoo! Rhett and I shopped and spent the day relaxing at home. Tonight Rhett's parents are taking us out to one of my favorite steak restaurants, Coach N Four. Yumm...I'm practically drooling now.
PS...Did I mention that Wesley moved out? He wantst to save some mula (which is understandable), so he's going to live with the parentals for a couple of months until he graduates from the police academy. Rhett and I are FINALLY living by ourselves. Don't get me wrong, I love Wesley and he was not a problem to live with, but I am just so happy to finally be a married couple living on our own. Fully on our own. It really does feel different I must say. I love it!!! Have a great rest of the week and a great weekend everyone!!
